This is a really easy recipe to follow. Preparation time is around 20 minutes and cooking time is 12-15 minutes. You can be creative to how you decorate them, or just add a couple of drops of food colouring to the filling, which I did. Let me know how you go in the in the comments below :)
WHAT YOU WILL NEED 250g butter 1tsp vanilla essence 1/2 icing sugar 1 1/2 cup flour 3/4 corn flour FILLING 50g butter, softened To make filling, mix 3/4 cup icing sugar all ingredients together. Food colouring (optional) METHOD Preheat the oven to 180°C. Line 2 baking trays with non-stick baking paper. Beat butter, icing sugar and vanilla with an electric mixer until creamy. Sift together the flour and cornflour, add to the creamed mixture and mix well. The mixture wil resemble breadcrumbs. Roll heaped teaspoonfuls into balls and place on a baking tray. Press down lightly with a fork. Note: the biscuits won't spread.Bake for 12-15 minutes until the biscuits are firm and lightly golden, but not brown. When the biscuits have cooled, join in pairs with generous spread of filling. Store in an airtight container.
